Caribbean potato curry (Slow cooker, Gluten Free)

Ingredients

  • vegetable stock
  • low fat coconut milk (Light/, for more calorie control)
  • 1 sweet potatoes (large sized, chopped and peeled, or 2 medium)
  • 1 can kidney beans (drained)
  • 1 cho cho (peeled and chopped, or use 1 zucchini)
  •  2 bell peppers (chopped)
  • 1 can coconut milk (+ 1/3 cup of water)
  • 2 tablespoons curry powder (see notes for recipe)
  • 1 cinnamon stick
  • 4 garlic cloves (chopped)
  • 2 scallion (chopped)
  • 1/2 teaspoon all spice
  • 1 ginger (thumb sized, minced)
  • 2 bay leaves
  • 5 sprigs thyme
  • juice (lime)
  • pink salt (to taste)
  • 2 tablespoons coconut oil
