- 2 bell peppers (chopped)
- 1 can coconut milk (+ 1/3 cup of water)
- 2 tablespoons curry powder (see notes for recipe)
- 1 cinnamon stick
- 4 garlic cloves (chopped)
- 2 scallion (chopped)
- 1/2 teaspoon all spice
- 1 ginger (thumb sized, minced)
- 2 bay leaves
- 5 sprigs thyme
- juice (lime)
- pink salt (to taste)
- 2 tablespoons coconut oil
